Breakfast casserole
Ingredients
- 8 scallionrozen hash brown patties
- 3 cups sharp cheddar cheese
- 1 cup monterey jack cheese
- 1 cup fully cooked ham, diced sausage, or bacon
- 1 scallion, thinly sliced
- 7 eggs
- 1 cup milk
- 1/2 tsp salt
- 1/2 tsp dry mustard
- 1/2 tsp pepper
Instructions
- Place hash brown patties in a single layer in a greased 13 x 9 inch baking dish
- Sprinkle with cheeses, ham, and scallion
- In a bowl, beat eggs, milk, salt, mustard, and pepper until well combined
- Pour over hash browns
- Cover and bake at 350º for one hour
- Uncover and 15 minutes longer or until edges are golden brown and knife inserted near center comes out clean
