Breakfast casserole

Ingredients

  • 8 scallionrozen hash brown patties
  • 3 cups sharp cheddar cheese
  • 1 cup monterey jack cheese
  • 1 cup fully cooked ham, diced sausage, or bacon
  • 1 scallion, thinly sliced
  • 7 eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 1/2 tsp pepper

Instructions

  • Place hash brown patties in a single layer in a greased 13 x 9 inch baking dish
  • Sprinkle with cheeses, ham, and scallion
  • In a bowl, beat eggs, milk, salt, mustard, and pepper until well combined
  • Pour over hash browns
  • Cover and bake at 350º for one hour
  • Uncover and 15 minutes longer or until edges are golden brown and knife inserted near center comes out clean
