Carrot Cake

Ingredients

  • 4 eggs
  • 1 cup oil
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 4 cups grated carrots (approx. 1 lb)
  • 2/3 cup chopped nuts

Frosting

  • 3 8oz packages slightly softened cream cheese
  • 3 cups sifted powdered sugar

Instructions

  • Preheat oven to 350º
  • Grease and flour two 9" round pans
  • In a large mixing bowl, beat eggs until foamy
  • Add oil in a thin stream and beat well
  • Mix four, sugar, cinnamon, and baking soda together
  • Add egg mixture and mix well
  • Fold in carrots and nuts
  • Pour in prepared pans and bake for 30-35 minutes or until toothpick inserted in center comes out clean
  • Cool 10 minutes in pan and invert on rack to cool
  • For frosting: Beat cream cheese until smooth. Add powdered sugar and mix thoroughly. Beat at high speed until smooth. Do not over mix.
