Carrot Cake
Ingredients
- 4 eggs
- 1 cup oil
- 2 cups flour
- 2 cups sugar
- 2 tsp cinnamon
- 2 tsp baking soda
- 4 cups grated carrots (approx. 1 lb)
- 2/3 cup chopped nuts
Frosting
- 3 8oz packages slightly softened cream cheese
- 3 cups sifted powdered sugar
Instructions
- Preheat oven to 350º
- Grease and flour two 9" round pans
- In a large mixing bowl, beat eggs until foamy
- Add oil in a thin stream and beat well
- Mix four, sugar, cinnamon, and baking soda together
- Add egg mixture and mix well
- Fold in carrots and nuts
- Pour in prepared pans and bake for 30-35 minutes or until toothpick inserted in center comes out clean
- Cool 10 minutes in pan and invert on rack to cool
- For frosting: Beat cream cheese until smooth. Add powdered sugar and mix thoroughly. Beat at high speed until smooth. Do not over mix.
