Chicken curry with rice (low fodmap)
Ingredients
- 2 chicken breasts, diced
- 1 cup rice
- 2 cups coconut milk
- 3 large bell peppers
- 2 large carrots
- 2-3 tbsp curry powder
- cilantro garnish
Instructions
- Cook rice
- Heat olive oil in large pan over medium heat. Add chicken cubes and cook until browned. Salt & pepper ofc.
- Add bell peppers and carrots, saute 5-10 min.
- Stir in curry powder - start with 2 tbsp and add more as needed. Cook for another minute
- Add coconut milk, simmer 15 min.
- Serve the curry chicken over rice. Garnish with cilantro if desired.
