Chicken curry with rice (low fodmap)

Ingredients

  • 2 chicken breasts, diced
  • 1 cup rice
  • 2 cups coconut milk
  • 3 large bell peppers
  • 2 large carrots
  • 2-3 tbsp curry powder
  • cilantro garnish

Instructions

  • Cook rice
  • Heat olive oil in large pan over medium heat. Add chicken cubes and cook until browned. Salt & pepper ofc.
  • Add bell peppers and carrots, saute 5-10 min.
  • Stir in curry powder - start with 2 tbsp and add more as needed. Cook for another minute
  • Add coconut milk, simmer 15 min.
  • Serve the curry chicken over rice. Garnish with cilantro if desired.
