Enmoladas de pollo
Ingredients
- 1 1/5 lb shredded chicken
- 1/2 onion, chopped
- Shredded cheese
- Sesame seeds
Instructions
- Make mole sauce (3-4 cups of sauce)
- Set enough aside to dip tortillas (1 cup)
- Cook shredded chicken according to instructions, then add to remaining mole sauce.
- For each:
- Fry tortilla in oil, approx 8 sec each side
- Dip each side in reserved sauce
- Add 2-3 tbsp of mole chicken
- Add a sprinking of chopped onion and shredded cheese
- Roll
- After all have been assembled, spoon mole sauce over them on the plate
- Garnish with sesame seeds and extra shredded cheese if wanted - microwave 30 sec to a min to melt the cheese
