Enmoladas de pollo

Ingredients

  • 1 1/5 lb shredded chicken
  • 1/2 onion, chopped
  • Shredded cheese
  • Sesame seeds
  • 12 corn tortillas

Instructions

  • Make mole sauce (3-4 cups of sauce)
  • Set enough aside to dip tortillas (1 cup)
  • Cook shredded chicken according to instructions, then add to remaining mole sauce.
  • For each:
    • Fry tortilla in oil, approx 8 sec each side
    • Dip each side in reserved sauce
    • Add 2-3 tbsp of mole chicken
    • Add a sprinking of chopped onion and shredded cheese
    • Roll
  • After all have been assembled, spoon mole sauce over them on the plate
  • Garnish with sesame seeds and extra shredded cheese if wanted - microwave 30 sec to a min to melt the cheese
