Ingredients
- 5 anaheims
- 25 tomatillos
- 5 poblanos/pasilla
- 1.5 white onions
- 4-5 jalapenos
- 1-1.5 garlic heads
- 6-7 lb chicken thighs (tia's calls for whole chickens)
Instructions:
Shredded chicken:
- Slow roast with desired spices
- Debone & shred. Reserve broth.
Roast Anaheims, poblanos, jalapenos, tomatillos:
- Broil 7-10 min each side or as needed.
- Peel skin and deseed.
Roast onions:
- Broil 7-10 min, don't flip.
Roast garlic heads:
- Broil with oil/broth approx. 7-10 min or as needed.
Sauce:
- Blend all ingredients except shredded chicken with approx. 2 ½ cups of reserved broth added gradually.
- By hand (use gloves), add chicken to a bowl and gradually pour and mix sauce into the meat.
*2026-01-01: Try fewer tomatillos, more anaheim, and less poblano? Color too pale. Used 4 jalapeños, wasn't spicy enough.
