Chile colorado verde para tamales

Ingredients

  • 5 anaheims
  • 25 tomatillos
  • 5 poblanos/pasilla
  • 1.5 white onions
  • 4-5 jalapenos
  • 1-1.5 garlic heads
  • 6-7 lb chicken thighs (tia's calls for whole chickens)

Instructions:

Shredded chicken:

  • Slow roast with desired spices
  • Debone & shred. Reserve broth.

Roast Anaheims, poblanos, jalapenos, tomatillos:

  • Broil 7-10 min each side or as needed.
  • Peel skin and deseed.

Roast onions:

  • Broil 7-10 min, don't flip.

Roast garlic heads:

  • Broil with oil/broth approx. 7-10 min or as needed.

Sauce:

  • Blend all ingredients except shredded chicken with approx. 2 ½ cups of reserved broth added gradually.
  • By hand (use gloves), add chicken to a bowl and gradually pour and mix sauce into the meat.

*2026-01-01: Try fewer tomatillos, more anaheim, and less poblano? Color too pale. Used 4 jalapeños, wasn't spicy enough.
