Mexican Rice

Ingredients

  • 1 cup long grain rice
  • 2 tbsp oil
  • 1/4 sliced white onion
  • 1/2 tsp cumin
  • 1/4 tsp pepper
  • 1 tbsp chicken bouillon powder
  • 5 oz tomato sauce
  • 2 cups water

Instructions

  • Add oil to pan, toast rice until golden on med/low heat (7ish min)
  • Add onion, sautee one min or so
  • Add garlic, sautee quickly
  • Add tomato sauce, mix in
  • Add bouillon and spices and mix
  • Add water
  • Cover and simmer. When water is boiling, lower heat to low
  • Cook on low for 20 min
