Thai spring rolls with spicy peanut sauce

Ingredients
- 1 package rice paper wrappers
Assorted veggies
- 1 carrot
- 1/2 cup daikon
- 1 cup napa cabbage
- 1 red pepper
- 1 cucumber
- 1/2 cup bean sprouts
- 1 cup snow peas
- pickled ginger
- thai basil
Dipping sauce
- 1/4 cup finely chopped cilantro
- 1/4 cup finely chopped toasted peanuts
- 2/3 cup fish sauce
- 2/3 cup rice wine vinegar
- 1 tsp orange zest
- 1 tsp minced hot red dried pepper, seeded
- 1 tbsp minced garlic
- 5 tbsp sugar
Instructions
- All veggies should be thinly julienned
- Place clean dry towel on counter
- In a bowl of tepid water, place one rice wrapper and soak until soft (30 seconds to a minute)
- Arrange veggies, basil, and ginger in center and roll like a burrito
- Continue until you have desired quantity
- To serve: Slice in half diagonally and serve with dipping sauce
- For dipping sauce: combine ingredients and let flavors meld for one hour
