Thai spring rolls with spicy peanut sauce

Ingredients

  • 1 package rice paper wrappers

Assorted veggies

  • 1 carrot
  • 1/2 cup daikon
  • 1 cup napa cabbage
  • 1 red pepper
  • 1 cucumber
  • 1/2 cup bean sprouts
  • 1 cup snow peas
  • pickled ginger
  • thai basil

Dipping sauce

  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped toasted peanuts
  • 2/3 cup fish sauce
  • 2/3 cup rice wine vinegar
  • 1 tsp orange zest
  • 1 tsp minced hot red dried pepper, seeded
  • 1 tbsp minced garlic
  • 5 tbsp sugar

Instructions

  • All veggies should be thinly julienned
  • Place clean dry towel on counter
  • In a bowl of tepid water, place one rice wrapper and soak until soft (30 seconds to a minute)
  • Arrange veggies, basil, and ginger in center and roll like a burrito
  • Continue until you have desired quantity
  • To serve: Slice in half diagonally and serve with dipping sauce
  • For dipping sauce: combine ingredients and let flavors meld for one hour
